Ability to edit playlists / play only checked s...

Can you now not edit playlists while 'inside them' as it were? I'm completely confused by what seems like a particularly stupid move from Apple, they've removed the 'Edit playlist' function?

Also, i've unchecked/unticked songs yet they still play when i leave iTunes playing, and i can't find the option to only play ticked/checked songs. Has that gone?

And finally, have they removed the function where you could replace an older file with a higher quality file of the same file name from a CD? My ability to see files in order of 'Date Added' is the only way i know where anything is speedily so replacing files is something a bit special to me.
