disk utilities no longer give the option to format in msdos or exfat on macbook pro v 10.12.6 mac os sierra any ideas why ?

Are you looking at Disk Utility on your startup disk? If that's so, then the option would be grayed out. You'd need to be using Recovery Mode to do that.

Yes, but if you try to do it from the startup volume it will be grayed out. That was the point I was trying to make.

I think I'm just questioning your wording. It the use of 'from' that has me confused. As I think you are saying you cannot select and erase the boot disk/partition, unless you use Recovery, or boot from some other disk/partition.
