How do you save existing photo albums on an iPad when new albums are being downloaded via iTunes ?

If you mean keep albums that you had previously synced from a computer then you have to include them in the photo sync - synced photos can't be deleted directly in the Photos app, instead they are removed by not including them in the next photo sync
