Will I still get updates if I stay with iOS 10?

Possibly, but unlikely.

Though Apple has been know to update older OSes when critical vulnerabilities appear, generally the the old OS stops getting updates once a new one is released, as basically the new one is in itself an update to the old one.

You can hold off on updating to iOS 11 at this time, and update at a later time if you so wish however.

If you mean iOS updates, probably not, and if your device is capable of running iOS 11, definitely not. Any future updates to iOS 10 will only be for devices that can’t be updated to iOS 11.

If you mean application updates, it depends on the developers; in general, the number of updates which remain compatible will decline over time.
