Why am I having trouble burning music from viny...

I'm having trouble burning music from vinyl to CDs on my iMac (version 10.12.8) so that I can play them in my car and the home entertainment center!  I'm using an Audio-Technica USB/

analog phonograph hooked to my iMac that produces.IFF format results.  These must then be converted to an format that is acceptable or plays in my car and entertainment center.  All this fails.  Is there something I'm doing wrong?
