There used to be a way to automatically delete old emails on iPad.

Settings> Mail, contacts, calendars> Account name> Advanced> Adjust the remove time.

Is there a way to do this in iOS 10

Yes for e-mail accounts in iOS 10.3.1

Example iCloud account below

Settings > Mail > Accounts > iCloud > Mail > Advanced > Remove > your options here

That option just deletes messages which are already in the trash and not old messages in general.
