Backup Retrieval Help

After 9 weeks without a backup, my iPhone 7 iOS 10.3.3 backed up to my Lenovo laptop (Windows 7) and after it was done I pressed the restore prompt and it went to the last backup, from months ago... arggg... what can I do to update all the info? It's obvious that I don't have a clue, so step by step info would be so great, if possible! TYIA!!

Open iTunes.

Click this near the top of the window.

Then scroll to the Backups section and click Restore Backup.
