series 3 GPS cellular ceramic watch and iPhone 5s

I would like the ceramic series 3 watch, but i don't want to upgrade my phone!!!

can I still use the series 3 watch GPS+cellular for everything but cellular functions if i have an iphone 5s. I realise for the cellular functions i would need an iPhone 6 or newer.

Apple advises that Apple Watch Series 3 (GPS + Cellular) requires an iPhone 6 or newer with iOS 11 or newer.

Yes, they say you need an iPhone 6 or newer for the GPS+cellular watches, but not for the series 3 GPS only watches (for these an iPhone 5s is fine). Therefore, if i don't enable the cellular features on the watch will it work fine with a 5s?

If you don’t have at least an iPhone 6, you won’t be able to even set your watch up. Initial configuration relies on a connection to a phone.
