Currently only EE offers support for the Apple Watch in the U.K. yes.

You may need to contact Three, and inquire about if or when they plan on supporting the Apple Watch.

Apple Watch Series 3 (GPS)

Apple Watch Series 3 (GPS) models will work in conjunction with a compatible iPhone using any UK carrier service plan. The models require an iPhone 5s or newer running iOS 11 or newer.

Apple Watch Series 3 (GPS + Cellular)

Apple Watch Series 3 (GPS + Cellular) requires an iPhone 6 or newer with iOS 11 or newer.

To use the built-in cellular features, Apple Watch Series 3 (GPS + Cellular) models require a compatible service plan from a supported carrier.

At present, EE is the only supported UK carrier. If you do not wish to sign up with EE, then you cannot currently use the built-in cellular feature with another UK network.

However, Apple Watch Series 3 (GPS + Cellular) can still be paired, set up and used for other features in conjunction with using another carrier's plan on your iPhone whilst skipping the steps to activate cellular.

The cellular feature can then be enabled later, if and when you are using a compatible service plan on your iPhone, whether from EE or another UK carrier in due course.

You may wish to contact Three to enquire about their plans for providing service plans for iPhone that support Apple Watch Series 3 (GPS + Cellular).
