how do you change the letters Apple Mail puts n...

Search terms didn't work and I can't find it in Help. The picture shows it:

I'm talking about the MG. I can't find anything about how to change the letter(s) or turn it on or off. Not a big deal, just one of those annoyances when the person's name starts with a Z and Mail puts a K there.

In Mail Preferences > Viewing turn off Show contact photos in the message list.
