IOS 11 "improvements"?

So, I have an iPad Pro 12.9 and just updated to IOS11 due a problem with an app. The app now works but I have an anomaly in the "new look" keyboard settings. According to some gossip I read (nothing useful from Apple, as per usual), the new keyboard (with flick down characters) does not work on the big Pro. Fair enough. Except it does work in some apps and not in others. What's the story? SHould it, or shouldn't it?
And, despite having a big-spec iPad that is less than 12 months old, I don't get the "format" option in photos.
Since these were the headline items for IOS11....what do I actually get for this update?

I'd appreciate some concrete info from the manufacturer when they force me to do something like this - especially since the wifi download failed and I had to recover my iPad to make it work again. Another half day of my life that I'll never get back.
