You can log out of an account by tapping on the id at the bottom of the Featured tab in the App Store app or in Settings > iTunes & App Store, and you can then log in with a different account.

When you download updates to apps you will be asked for the password of the account that downloaded that app (everything that you download from the iTunes stores is permanently tied to the account that downloaded it), which will not necessarily be the same as the currently logged in account
