On my Ipad2 I am stuck on the choose Backup screen. It will not actually let me select a backup due to an upgrade needed?

If you are trying to restore a backup form a newer iOS to a device that is running an older iOS, you will have to update the device before you can restore that backup.

 

You can erase the device in Settings>General>Reset>Erase all content and settings and then after activating the device go to Settings>General>Software Update and download the newer iOS OTA.

 

You can connect to iTunes to update the device if you prefer to do that.
