Itunes magically turned on encryption without a...
On Saturday I ran a backup of my Iphone to my PC (Win 10) using iTunes. The encryption option was not checked but after resetting the phone to factory I found that the backup I just made was encrypted and required a password. The encrypt option was still not checked at this point.
I looked and there was an older backup on the PC and it was not encrypted. I used to restore the phone and then deleted all backups.
At that point I tried checking the encrypt option (it was still blank) so I could uncheck and turn encryption off. But even though there are no backups Itunes wants a password to uncheck the box. I never entered a password so I don't have one.
How do I turn the encryption feature off. I don't need any of the encrypted backups.

The only way to use an encrypted backup or turn off backup encryption for your current backup is with the password that was entered when it was set up. The setting is stored on the device itself, so persists even if you delete your current backup set or switch to a new computer. The password might be blank, or any computer, Apple ID, Wi-Fi password or device PIN that you've used in the past, working from the assumption that you might have reused a common password that you were using when you first activated encryption. If you want to turn off encryption going forward you can either erase and set up as a new device, or backup the current state of the device to iCloud, then subsequently restore from it. Non-iTunes media will need reloading from your computer once the restore is complete. See How to back up your iPhone, iPad, and iPod touch - Apple Support for details. Obviously this approach is only helpful if your device is currently functioning correctly. If you have content on your device that isn't in your library see Recover your iTunes library from your iPod or iOS device. I would also recommend you copy everything out of the camera roll if you haven't already.

I'm sure I never turned it on, in fact the box was unchecked when I made the backup ( I remember thinking about it) before I wiped the phone. Even after i was trying to restore and iTunes was asking for an encryption key the box remained blank.
After reading many helpful posts I think encryption was turned on by a MDM tool at my last job. The tool probably changed the phones settings but not iTunes. When I quit that job they removed all the software from the phone. Not a clean job though.

MDM could well explain it. Try using a blank password to turn off encryption.

I followed your instructions and after the reset I connected the phone to ITunes. At that point the encryption box was unchecked. Then I restored the phone from the Icloud backup. When I connected the IPhone to Itunes the encrypt backups box was again checked. This had occurred even though the backup to cloud was checked (not the backup to the PC). It seems whatever has done this is in all backups.
I can not enter a blank password as the OK button is greyed out until something is entered.
I had another really strange occurrence. After entering my apple ID and connecting to Icloud but before installing the backup I received popup screens asking for a password to log two addiitional different email addresses into the app store. example (Lehigh university is a local school). and At the time I clicked the skip this step and all went ok as I was logged in under my apple id jfyiii.mail@...
An attempt to log on the c101 address came back again later after the backup downloaded and it was very insistent. the cancel button just cycled back to the same popup screen. I thought IOS couldn't get one but could this be a virus?

There isn't an entry on the iPhone for settings > general > profile? Am in in the wrong place.
I attempted to uncheck encrypt backup box as soon as I restored phone (from the icloud) and it asked for a password.
If you don't see anything there then there isn't anything to see. Companies may use profiles to enforce certain security settings for devices that are allowed to connect to their networks.
Is there still an existing encrypted backup that iTunes wants to access? Perhaps this is triggering the prompt. I haven't been able to test it personally as I don't have room to backup my device to iCloud, but others have reported success using this approach.

I have a similar problem - after leaving work, I'm trying to backup on my home computer (mac, Sierra 10.12.6)
Since I do not have the old encryption password, I did the suggested reset via settings --> general --> reset --> reset all settings.
When I reconnect to iTunes, "encrypt iPhone backup" is not checked (which is the correct result).
I click "this computer" and leave "encrypt iPhone backup" unchecked. Then click "back up now" and watch the entire process.
At the end of the backup, the "encrypt iPhone backup" turns on by itself - without asking, and without me entering a password. I watched this occur without any further input after clicking "back up now".
Another attempt, again following a reset via settings --> general --> reset --> reset all settings.
Connect to iTunes. "encrypt iPhone backup" is unchecked. I click the button, and it asks for a new password. However, no matter what i type in, it says the password cannot be changed (from which I infer it still thinks there is an encrypted backup and/or password somewhere).
iPhone has 10.3.3; iTunes version is 12.7.0.166
Any fine suggestions out there?
See Disable iOS backup encryption, which is a minor expansion on what I wrote . Are you able to backup to iCloud and then restore from it? This process usually removes the encryption setting. When you say "after leaving work" was this a work enrolled phone? The requirement for setting a password, and perhaps the password, might have been set in a policy.
