changing an apple id password on one device changes it on all devices. is there a way to unlink them?

Not if all of them are using the same Apple ID. You made the change to the Apple ID. That the Apple ID is in use on several devices doesn't matter.

As Eric Root wrote, changing an Apple ID password affects that Apple ID and only that Apple ID.

I think what you want to do is to "Sign Out" of each device, and sign in again under a different Apple ID. Beware that doing that means any app purchases (or iTunes purchases, or iBooks, etc) will still require the purchaser's Apple ID credentials to update or download that app again at no charge.

Also, bear in mind that any iOS device activated with an Apple ID will absolutely, positively require that exact same Apple ID before it can be transferred to another owner. That's the only way to "unlink" the device from its Apple ID, if I understand you correctly.
