Default Issues With Preview

I have been tolerating this for a while and need to figure out how to fix it as it is a big PITA.  It HAD been, until recently, Preview automatically opened jpgs, etc.  Now it mostly opens Adobe Illustrator instead and I do not want this to open these.  I go to "open with" and do not see Preview listed and have to go to fetch and find preview way down the list since it starts with "P".  I tell it to open others like this with Preview but this only seems to open all items with this name only and goes right back to Adobe the next time (or not).  How can I fix it to do this all the time?  I do not want to get rid of the Adobe app.
