I have an iPad and an iPhone that I can trade in to receive store credit, if I bought the iPhone 8 right now and took the iPad and iPhone to an Apple store and receive store credit, could I use that credit to knock down the amount of monthly payments on the iPhone I bought before I went into the store?

Maybe.  Do you own these devices outright, or is this iPhone the one you are talking about here:

So the first point is you cannot simply "receive store credit" for a device you do not own outright.  The balance on a device you don't own outright may, under some circumstances, be forwarded to your new device, but it certainly would never simply disappear.

 

The second point is what you receive is store credit.  This is not cash, and cannot be used for anything other than future store purchases.
