Mail "only use this server" Missing

Hello,

I'm having a major issue with my work email on Sierra Mail. Every time I try and send an email from my exchange account, it sends from my Gmail account. I've run into this in the past, and was able to fix it with the "only use this server" checkbox in the server settings, but that is no longer there. Please help! I literally cannot use my work email at all without this option.

Also, for some reason, in my gmail account it shows only the Google server as an option for outgoing mail, while for my exchange account it shows both exchange and google. Neither are SMTP servers, so they cannot be removed. If the gmail option can be removed from my exchange account completely, that would be amazing.
