One SSD or two SSD’s?

I already have a 500GB SSD installed (its full) and have a new 2TB SSD for replacement. But would it be better to put the 2TB SSD in the optical bay and just leave the original SSD where it is, using it for the OS and applications only? And the 2TB SSD for files only??? 

Any reasons for or against???

It’s a mid 2010 mbp 15” 2.8Ghz i7 running 10.12.6
