How do we copy JUST the email address?

Apple mail - Sierra...

Currently, when I copy the 'from email address' and paste it somewhere like a text editor it copies the whole name an email address And pastes it like:

The Name <xxx@xxx.com>

Then, in many cases I have to manually clean/delete text for just the email address because I want just this:

xxx@xxx.com

Q: Is there some way this can be done automatically? I seem to remember that in the past there was a choice to just copy the email address only and not the other text. Does that still exist in Apple Mail Sierra somewhere?

Q: aside from that maybe there's some kind of AppleScript or other kind of tool I can use to just extract the email address only?

I'm not sure I understand what you are seeing, but try going to Mail/Preferences/Viewing and uncheck Use Smart Addresses.
