Sorry to hear that. Without the password, you will not be able to use the backup.
Unfortunately, you will have to delete the backup, and restore the phone to factory to be able to remove the encryption selection in iTunes, and to be able to make a backup in the future.
Here is my scenario that drove me crazy for two days:
1. Switched carrier from ATT to Tmobile
2. Had to give up my iPhone 7 Plus that was under payment plan at ATT and get a new iPhone 7 Plus from Tmobile.
3. Prior to the whole process, I backed up my iPhone to my computer WITHOUT encryption. I repeat, without encryption. In hindsight, I should have backed up my old iPhone to the iCLOUD.
4. Left the Tmobile store with my new iPhone 7 plus and went home to restore my new iPhone from my computer backup.
5. Well, iTunes had taken my backup to the computer and ENCRYPTED it without my knowledge. Don't ask me how but it DID. I am 100% certain that I did NOT check the encryption box prior to backing up the old phone.
6. I took the phone to the Apple Store and they said "Can't help you without the password." Thanks for nothing.
7. Went back home and scoured the blogs for information. I looked for "work-arounds" , software downloads to crack the encryption, etc. No joy. Totally bummed out.
8. After reading all of the blogs and the Apple Support pages, I learned that there's a glitch in iTunes whereby it simply encrypts your backup without you doing a darned thing, for NO apparent reason. Itunes then puts one of your old passwords (it could be ANY password that you've EVER used...ever.) It could be an old Wifi password, Apple ID, Twitter, ANYTHING - ANY old password.
9. The bottom line is this: You MUST enter the password or you won't be able to open that encrypted backup. Apple won't help you and there's no way around it.
SO HERE'S the fix that worked for me:
Get out your pencil and paper and make a list of every single password that you've ever used for anything on your PC, MAC, or iPhone - new or old. Somehow someway, iTunes pulls one of your old passwords of retirement and uses it to encrypt your back up. No bueno.
After you've made a list of every single password that you can remember, start entering the passwords one at a time into iTunes until you find the one that works. This is the only thing that worked for me on my Mac. There may be software hack programs out there for PC but I didn't see any for Macs or I would have bought one.

And Apple, if you're listening, PLEASE fix this glitch. The blogs show over a decade of folks screaming for help with this same issue but apparently nothing has ever been resolved.
