Migration Assistant: About 15 minutes remaining...

Migration Assistant appears to be stalled at 15 minutes to go. Cancel and retry? Let it go the rest of the night? Send this new iMac back?

My personal instinct would be to cancel and retry. You gave it the benefit of the doubt for three hours with no changes, and that seems like enough time. Depending on how much data you're transferring and how long it took to get to the 15 minute point, though, you might consider waiting it out longer. Really it's up to you, but I wouldn't send the Mac back without giving it another chance. Consider switching to a wired connection to speed things up if you aren't already.
