How long is it supposed to take?

I forgot the passcode of amy iPod and I'm trying to restore and update it but its taking long time. how long should I expect it to take?

It all depends on your internet connection speed.  Tell us what version of iTunes you're using (do not say "the latest").  Tell us what evidence you see of download and/or update progress.
