I need to cancel a couple apps that keep charging me and I don't even use them anymore ! How do I do that?

May I know the device you are using tap the settings on your home screen which looks like cog wheel

The usage tab shows list of apps installed on your device and the space each consumes

1. Tap on the app you want to delete

2. Once again iOS will ask if you wast to delepermanently

Deleting an app will not stop a subscription. Even if the app is deleted, the user will still be charged for the subscription service if it has one. In that case, which is what the OP described, you would need to follow the instructions in the support document that ChitlinsCC provided.
