iTunes organizing

Tim this day iTunes has frustrated the daylights out of me. iTunes always creates a new Music folder and it never gets the albums right as well as keeping all the songs on an album in one folder. I have a huge archive and can't understand why I still have to go in and change album covers or rewrite info to make songs sit in one folder (which still doesn't work). So before I bash iTunes I want to know how to have organization.
