ITunes erased my lyrics

I automatically let iTunes update my versions.  Big mistake.  After decades of careful insertion of lyrics into my library favorites, iTunes has erased it all.  Days of work. 

iTunes launches when I connect devices and tries to make an Internet connection when I don't want it to.  I can't find where to turn this off.  Then it takes time to go after multiple dialogs of OK OK OK. and Quit. It does this when I am about to give a lecture from my Mac.

Album cover art is nuts and no longer matches what I used to have in the library.

I can't tell how many songs I have "lost" to iTunes assuming that I should not have that song.

I used to love Apple.  Entropy.
