No option to encrypt back up in itunes, iphone7

Hi,

Using Itunes 12.7.0.166 with iphone7 on windows laptop.

Where is the option to backup with encryption?

When I follow the Apple guide and click on the device (iphone) the word "summary" does not show up and therefore I cannot click on it and also no option to backup.

However if I click on File/devices, there is a backup option but NOT backup with encryption.

I am sure there is something real stupid that I am not doing...

Please help....see screenshots attached.
