cellular watch

If I bought a cellular watch, do I have to connect to my cellular network? Or can I still only use Wi-Fi?

You can use it without activating the cellular feature.

 

In order to use the built-in cellular features on Apple Watch Series 3 (GPS + Cellular) you would need a carrier service plan for your iPhone that specifically includes support for Apple Watch (including the carrier activating the watch on the plan):

 

 

If you do not wish to sign up with a supported carrier or purchase a supported plan, then you will not currently be able to use the built-in cellular feature.

 

However, Apple Watch Series 3 (GPS + Cellular) can still be paired, set up and used for other features whilst skipping the steps to activate cellular. The cellular feature can be enabled later, if and when you have a compatible service plan.
