Using my Mac, I no longer see Edit on a Playlist.

How do I now add a Song to a Playlist?

Stacy,

If it is a Regular Playlist (note icon), drag the songs into it.

If it is a Smart Playlist (gear icon), edit its rules to include/exclude exactly what you want.  You can do this by right-clicking the playlist name and choosing "Edit Rules."  (This is a new option in iTunes 12.7.)
