iPad error while updating to ios 11

My iPad mini 3 was plugged into my computer and was downloading the new ios 11 update. All of a sudden my iPad showed the screen that has the link to the restore website. See below -

I followed all of the instructions to do the reset and try plugging in again. I tried to update and it didn't work. I then tried the restore and got the error 3503. I tried everything - restarting my computer, updating itunes, etc. I still am stuck on the same recovery screen and it won't restore. PLEASE HELP!
