How do I turn off iCloud Drive and restore thos...

Simple question: I turned on iCloud Drive "Documents..." . Now my files are all on the cloud. I need them when I am off-line and want to undo all that because I only have one computer and don't need to sync documents. When I unclick "documents and desktop" everything on my Mac disappeared. How do I get back to life before I turned on that file on iCloud??
