How to backup iPhone to mac

The new iTunes app is basically useless to me now! How do I back up my iPhone and iPad to my mac? I already pay apple for iCloud space and don't want to have to buy up to more space. This change in iTunes 12.7 is a money grab and a time suck!! I have 3 iPhones and 2 iPads. I keep them organized and backed up on my mac. I WILL NOT BUY ANOTHER APPLE DEVICE until they give me back the ability to backup WHERE I WANT TO BACKUP. You just LOST MY MONEY ON A PURCHASE of the new iPad Pro and the new iPhone X. I don't have hours or days to restore the hundreds of apps I use via wifi. BAD MOVE, APPLE!!!!!

Apps were never part of Backups. Only app data was included. Backups in iTunes 12.7 work exactly the same way as they always did.
