Folder called Album Artwork and in this folder ...

I have just turn in to discover that in the iTunes folder there is a folder called Album Artwork and in this folder there is one called Cache. This folder uses more than 3Gb of my disk. Is there something I can do to free up this space?

Make a backup of your iTunes folder first.

You should be able to delete the Album Artwork folder, although you may need to redo "Get Album Artwork" on certain albums.

Leave it alone unless iTunes isn't displaying album artwork properly. It is a cache used to present artwork files more quickly than they would be if they were taken from the source media file each time. If you delete it iTunes will just rebuild it as you use your library.
