The cellular plan (AT&T if that matters) that my iPhone 6 is on is not compatible with the Apple Watch Series 3. I would like to get a cellular Series 3 because I want to be able to use it if my plan changes, I also prefer the look of the stainless steel case model. Is it possible to not have the cellular activated on a series 3 and just use it with wifi and bluetooth?

Yes, you can buy the cellular model and it will still work when paired to your iPhone or when on a known Wi-Fi network. You do not need to sign up for a cellular plan at the time of purchase.

It is possible to use Apple Watch Series 3 (GPS + Cellular) without enabling the cellular feature, which can be activated later, if and when desired.
