Podcast Subscribe Button in iTunes is locked

In iTunes 12.7 a couple podcasts to which I am subscribed as indicating that I am now not subscribed. I cannot subscribe as the Subscribe Button is locked.

I had this on a couple as well, tried subscribing on my other devices and after closed and restarted iTunes, sometimes it would change but other times not - the only way that worked every time for me was to ctrl click on to podcast title in the main screen as below

eg. in my case somewhere on "AppleInsider Podcast" the select "Delete from Library".

You should then get back an unlocked Subscribe button as below

If the Podcast Show completely disappears you may have to add it back by searching the store and selecting Subscribe as you would for any other new shows, but when it's now added back the Subscribe button in Podcast Settings should no longer be locked.
