Apple Watch 3 and earlier pre

I am trying to set up the cellular on an Apple Watch but don't use an iPhone 6 or later.  I have access to one that I can slip the sim in for setup.  My question is does the Apple Watch need periodic contact with an iPhone 6 or can I set it up once on a wiped iPhone 7 then move the sim back to my earlier iPhone version?

No - Apple Watch Series 3 (GPS + Cellular) requires an iPhone 6 or newer with iOS 11 or newer.

It cannot be used with an older model, even if initially paired with a newer model.
