Since the 12.7 update where is the edit playlis...

Any one know how to edit a playlist now the edit playlist button has gone ?

With iTunes 12.7 you can open multiple iTunes windows and drag and drop between them. Right-click on a playlist and select Open in New Window.

Gone, but replaced with the ability to open multiple playlist windows instead.

Perhaps. It wasn't a feature I ever used. Typically my playlists are buckets that I sort as Album by Album Artist so a single window with the sidebar is all that I need.

Personally, never used the Edit option.

To remove tracks from playlist, open it in main window.

To add tracks, open the source in main window and drag onto the playlist in sidebar.
