How to back up Mac HD on dead drive MBP?

Hard drive likely dead. I'm trying to transfer the entire contents of my son's laptop onto external back up drive with Disk Utility "New Blank Image" but there's no compression option as per online instructions. What do I choose? OS Extended Journaled, OS Extended, ...case sensitive....etc?

Is New Blank Image the correct way to back up contents in the first place?

That's not the correct command. You need to select the drive as the source; if it doesn't show up, neither the Disk Utility nor any other backup product can retrieve the files from it.
