How to roll back to iTunes 12.6

The new iTunes 12.7 is a disaster for me & my family -- we're still using older iPhones & iPods that CANNOT run iOS 10 or 11 and now it's **** well near impossible to manage the apps on our four iPhone 4S and old iPod.  I'm having problems finding instructions for dumping iTunes 12.7 and reverting to the previous (useful, helpful, good) 12.6 version that I need to run. So far all searches on the Apple sites take me to the stupid 12.7 download page, which is exactly what I do NOT want.

Thanks for relegating me to the "bloat" category without any real warning, Apple.

iPhone 4S running iOS 9.3.5

iPod Touch running iOS 6.1.6 (expendable if absolutely necessary)
