How do I revert to the previous version of iTun...

I was very surprised to see all my apps, ability to manage iPad and iPhone pages, folders, etc has been removed from iTunes 12.7 - this was only noted >after< the app was installed, with a small window that says so long to apps, go get them on your device only.

How do I revert to previous version of iTunes to regain lost functionality?
