Can we still backup iPhone/iPad to Mac with iTunes, and store backup on computer?

Yes. If/when the time comes to restore the device apps will be downloaded directly from the store over Wi-Fi.

Thank you for responding, but the question was can I still use iTunes to store a backup of my iPhone on my iMac computer. The backup has more than apps i.e. music, photos etc.

I have resisted being dependent on cloud based solutions, and prefer to have my backups locally. My family has 3 iPhones, and 2 iPads. All are backed up regularly to their associated Apple computers.
