In iTunes 12.7

In iTunes 12.7 since the App Store will be removed how can one check for and do OS updates for their iMac for example ?

The Mac App Store isn't affected at all by this. And the iOS App Store is affected only in the sense that it's being split off from iTunes. Software updates will just keep happening all by themselves, if you've got your devices set to update automatically. For new software (like the forthcoming High Sierra) everything is exactly as before.
