Need help updating old Apple Watch.

I have an original Appe Watch. Im not certain which OS is on it, but I am guessing OS 2.

 

When I purchased the Apple Watch Series 2, I unpaired my original Apple Watch and it’s been sitting in a drawer since.

 

I now want prepare the original Apple Watch for someone else’s use. So far I have erased the Apple Watch. When I try to pair the Apple Watch, I do the following:

 

Ensure watch is fully charged and is currently on charging cable.
Select “English” for language on the watch
Select “United States” for region on the watch
Select “Start Pairing” on watch
Open the Watch app on my iPhone (7+ running latest iOS)
Select “Pair New Watch” in the Watch app.
Use camera capture watchsc4een to initiate sync.

 

At this point, I am prompted with the following “Update Your Apple Watch. To finish pairing, your Apple Watch must be running the latest version of watchOS”

 

I select “Update Now”.

 

It looks for the Update and prompts me to Download and Install. I select “Download and Install” then I am prompted to enter my passcode. I enter the passcode. I then agree to the Terms and Conditions.

 

It starts Download, but then it immediately pauses. The message says “You can resume the Download when you are connected to a Wi-Fi network”.

 

Problem is...I AM connected to Wi-Fi.

 

Troubleshooting steps taken so far:
Full power cycling both devices and trying again.
Trying a different WiFi network (I was on a 5G network, so I tried a 2.4G network in case the original Apple Watch could communicate on 5G)
Tried changing my network SSID to what I think it might have been back when the last time I used the watch in case that was why it thought I wasn’t connected to WiFi.

 

I am open to any other suggestions to try to get my old watch updated and paired. I appreciate the assistance.
