iCloud hides my documents and desktop

After setting up iCloud I found that my desktop items, calendar entries , and all my documents disappeared. The calendar entries still remained on my linked iPhone. After resetting iCloud later the missing items reappeared. But when saved my iCloud files to my Mac as suggested during the setup procedure, the items went missing again. My documents appear to be listed in the Finder's "All My Files" folder but are not organized in sub-folders as they were in "Documents.

Copy the files from iCloud Drive to a folder other than Documents and the Desktop. Go to System Preferences/iCloud/iCloud Drive/Options and turn off syncing or if you want to sync, turn off Optimization. Rearrange the files as desired.

when using iCloud for Documents and Desktop, I see the files get moved from my Documents & Desktop folders to iCloud's Documents & Folders. Does this mean I can only access these files from my Mac if I have internet connection. What I was really hoping iCloud could do was keep current all my Documents on my both of my Macs. however, I'd hate to use iCloud for this if no internet connection means no access to my files.

I can't find anything specially about this in Support

If you do not have Optimization turned on, the files are still on your computer. You can access them in Finder using iCloud Drive.

I can´t see an option to turn syncing of.

All iCloud operations is unfortunately very poor and it seems that it became even worse with APFS.

iCloud data should be more transparent to the user.

- Try this and you know what I mean:

   ls -aL '/Users/Username/Library/Mobile Documents'

-  Why can´t one organize iCloud data as in the Finder, sort, search, duplicate.

And always problems. It seems Apple stalled with improvements.
