Because Apple's servers are getting hammered by millions of customers attempting to forcibly download the updates at the same time. Be patient.

You probably have a poor internet connection.  And of course everyone is trying to download iOS 11 and Watch OS 4 from the Apple Servers, so there’s a lot of traffic to Apple’s servers.

It may get better if you find a better WiFi connection, and/or wait till late at night.

(btw I’m assuming it’s the download that says it will take 2 days, not the installation which should be local to your device.  Please correct me if that is not the case.)
