Which SSD for a 2010 Mac Pro and how to configu...

I have the following setup

Mac Pro (Mid 2010), 3.33 GHz 6-core Intel Xeon, 24 GB 1333 MHz DDR3, Sierra 10.12.6

1 TB SATA hard drive (I don't store videos or photographs requiring large amounts of space)

I should like to upgrade my hard drive to solid-state, and would value advice as to which of the options may suit me best, and how to configure the system. My initial thoughts are to do a clean install of High Sierra on the SSD and use the old hard drive for apps etc.
