Old email addresses

When I write a new email, on starting to enter a name, the Mail app fills in the details, presumably from my Contacts app, yet when I check, it has entered an old, deleted email address, not the new one in the Contacts app. Why is this?  Is it something I have failed to do?

Mail is getting it from: Mail->Window->Previous Recipients

You can delete it from there.

Thank you Tony, I wasn't aware that it would use that or that it would affect future responses, thought it would automatically pick up the addresses from the Contacts app.
