icloud sign out

How do i sign out of my icloud without it deleting my documents and data stored in my icloud drive on my iphone?

Go to Settings > Tap your name at the top of the screen and scroll down until you see Sign Out. You will be signed out of all Apple Services on your phone.

If you turn it off, you'll see a message (bottom of device) saying that the documents will be removed from the device. That's how iCloud was designed.
