iMac and SSD storage

Currently on a 2012 iMac, but are about to get the latest iMac .

It will be used for FCPX, Lightroom/Photoshop and running Windows on a smaller partition of the hard drive. I will also install photogrammetry SW on the Win partition.

Already decided to get an i7 and the 8GB graphic card. Really want a SSD but the 1TB is out of my budget. The internal SSD will have two partitions, about 350 GB for macOS, FCPX, LR/PS and the remaining ~150 GB for Win.

Will 500GB be enough if I keep all videos and stills on an external SSD connected via USB-C?
