If I bought an iPhone X when it comes out would I be able to pay for example £200 at first then hopefully a full rest of the payment the next month if not fully paid keep paying different amounts each month 

Depends on the type of installment plan you enter into.

 

Apple's Upgrade program (assuming its available in your location), lets you pay a  minimum set amount or more each month. Once you've completed the equivalent of 24 payments the iPhone is yours. If you pay the equivalent of 12 months or more, but less than 24 months, you can be eligible for an iPhone upgrade to a new version, and continue to pay for another 12 or 24 months.

If you choose your credit card or banks installment plan, you would need to talk to them to see if early payments are available without penalty, and if any amount can be payed.
